You’ve already heard about BDE. But you might not have heard that the D actually stands for Dumpling, at least over at Corvus in Capitol Hill. The biggest energy you really need in your life is Big Dumpling Energy and their thick, pillowy, perfectly stuffed dumps. This pop-up is taking charge of the Seattle bar food scene.
Capitol Hill’s dumpling game needed work, so BDE came to do the job with their traditional and creative options. My pick is the L.A.M.B. and yeah she’s a lamb but that doesn’t stop her from being the G.O.A.T. She took a dip in mother lake (AKA boiling water) and emerged with a shiny but tender wrapper that secures a juicy five-spiced lamb accompanied by a medley of nutty sesame sauce, a bright chimichurri, and springy cilantro. I’m whipped!
NOTE: You have to go early! Dumplings do sell out. But if that happens it’s OKAY. The furikake fries and sticky sweet chili Korean fried chicken can heal your heart until next time.
As for the restaurant, Corvus is definitely a fun late-night spot. It feels like a kickback with its goth undertones. When you go, you’ll get what I mean. It’s dim and a little spooky with apothecary treasures on the wall and a pretty cool bathroom. The music is never the same. It could be Crystal Castles or some cool witch-house mix. I can never really put my finger on it. Also, you can go in a few different directions: Just drinking a few Rainers on the patio? You can do that! Fancy cocktails, like the Bassilik with house-infused black lime gin and grapefruit? Do that too!
The TLDR: It’s sexy, silky, dark, and optimal for your dumpling cravings.
